The aim of the BIOREVEAL project is to develop innovative and functional food products by revalorizing plant by-products and waste as a source of bioaccessible bioactive compounds (BACs). This project aims not only to improve the gastrointestinal health of consumers, but also to contribute to the sustainability of the food sector by reducing waste and valorizing vegetable by-products. In addition, it aims to foster circular Economics within the food industry, promoting more environmentally friendly and resource-efficient practices.
The strategy proposal in BIOREAVAL for the study of CBAs present in by-products/detritus can also be extended to the future study of different bioactive components and strategies for the revalorization of by-products, which in itself represents an additional result to the knowledge generated in this project.
