This project goal toresearch and develop sustainable strategies to maximize the use of legumes grown in Navarra. This includes taking advantage of both the main products and by-products to create innovative sources of plant proteins and other beneficial compounds, improving the production of safe and healthy food and promoting circular Economics practices around the legume supply chain.
The project introduces important technological innovations, such as solid-state fungal fermentation and the extraction of bioactive compounds using ultrasound and high-voltage electrical pulses. These methods, together with technologies such as extrusion, make it possible to take full advantage of materials that are now considered waste.
The main challenges include process optimization to ensure maximum efficiency and product quality, as well as the adaptation of technologies to the specific conditions of legumes grown in Navarra. In addition, the project aims to develop innovative applications in aquaculture, snacks, 3D food and ready meals, which represents a significant challenge in terms of development. E
