Abstract:
This transformative project aims to goal revolutionize the alternative protein sector by fusing the benefits of plant-based proteins with the functional and sensory advantages (flavor, aroma, texture) of mycelial protein biomass to create innovative, minimally processed hybrid meat analogs that are healthy and tasty.
The project has the participation of 12 entities, including the University of Navarra, and is coordinated by RISE PROCESSUM AB. In this project Dr. Ludwig is the PI of one of the 8 defined "Work packages". This "Work package", of multidisciplinary character, also counts with the partnership of other 7 researchers from different Departments and lines of research of the University of Navarra. The proposal of project was submitted in February 2024 to the call "HORIZON-CL6-2024-FARM2FORK-01" (HORIZON Research and Innovation Actions) and has been recently approved (June 2024) reaching the maximum score in its assessment. Start-up is planned for January 2025.
