PLENTYFOOD has as goal to create a range of prototype foods that can be integrated into healthy diets to prevent and treat malnutrition. The project includes advanced technological and methodological innovations to modulate the satiating potential of ingredients such as protein and fiber. In addition, factors such as particle size and texture will be studied to influence satiety perception. The PLENTYFOOD consortium is formed by 8 companies and 3 agents of the Navarra System of research and development+i (SINAI) of which the University of Navarra leads the part of nutritional interventions and methodology development for satiety measurement.
Objectives of the project
→ Identify requirements nutritional goal.
→ Develop and characterize technological strategies to obtain textures that modulate satiety.
→ Incorporate plant-based ingredients rich in fiber, proteins and bioactive compounds.
→ Study the impact of these strategies on nutritional properties and satiety.
→ Create a range of foods with proven effect on satiety and their potential transfer to industry.
→ Investigate alternative preservation technologies to heat and their impact on food rheology and shelf life.
→ To evaluate the acceptance of the products in institutionalized populations.

→ DomusVi as business specialized in the care of the elderly, with experience in the design and supply of menus aimed at healthy eating and improving the quality of life
→ ADItech Foundation that brings excellence to research by incorporating the gender dimension in all its phases of research
