goal With the aim of improving the offer of healthy menus, a Decalogue has been drawn up for the cafeterias and canteens of the University of Navarra that wish to join the campaign.
Accreditation will be given only to those establishments that comply with the following requirements:
Offer a salad or vegetable dish as a first course alternative every day.
Offer half of the second courses based on fish and/or seafood or lean meats (chicken, turkey, rabbit).
Offer fresh fruit as a dessert option every day.
Include low-fat varieties in the dairy dessert offer.
Include some wholemeal products in the menu (bread, rice, pasta).
Offer olive oil as a dressing in any of its varieties.
Use olive oil or high oleic sunflower oil for cooking.
Preferably use cooking techniques that do not require a high fat content, e.g. steaming, grilling, grilling, roasting, baking, sautéing, etc.
Offer the possibility to order half portions
Offering a choice of salt-free options
