Abstract:

Nearly 80% of the artichoke plant is disposed of as by-products or used for animal feed. These by-products may be a rich source of polyphenols, specifically hydroxycinnamic acids (HCA), which could be used through revalorization strategies to increase dietary intake of these bioactive compounds. programs of study epidemiological suggest beneficial effects of dietary HCA intake in reducing the risk of diabetes subject 2. Thus, artichokes could be an interesting dietary source of HCAs with a potential health benefit for overweight people with insulin resistance, who are at high risk of developing diabetes subject 2, and for whom new dietary approaches for diabetes prevention need to be implemented.

The overall goal of project ARTI-UP is to intelligently design an artichoke product from by-products with a high content of bioavailable HCA, capable of being used in healthy and sustainable dietary strategies to prevent diabetes subject 2 in high-risk individuals through the use of a multi-integrating approach omics.
