The high school of Food Sciences (ICAUN) participated in the awarding of the "Healthiest Pincho" to cafeteria Casa Azcona.

One more year Navarra has celebrated the Pincho Week with the arrival of spring. 91 restaurants in the region, most of them located in Pamplona, took part in a competition that this year has reached its twelfth edition. The University of Navarra has participated in the organization of the contest, awarding the award to the healthiest Pincho of those presented.

And this award has been awarded to cafeteria Casa Azcona in Zizur Mayor for its "balanced combination of both food and culinary technologies: a skewer based on legumes and defatted meat, capable of providing significant amounts of iron, fiber and with an adequate profile fat", says Marta Cuervo, one of the dieticians-nutritionists of the high school of Food Sciences of the University of Navarra (ICAUN) who has collaborated as a jury of the contest, carrying out the evaluation of the organoleptic and healthy qualities for the election of the 'healthiest skewer'.

In addition, Leticia Goñi, dietitian-nutritionist, made a bromatological and nutritional evaluation . And the Full Professor in Nutrition and Bromatology, Alfredo Martinez, participated in the submission of the awards.

The contest awards went to:


- First award GOLD: 'Abaco 2010'. cafeteria Ábaco Restaurant. Huarte-Pamplona.
- First award SILVER: 'Asparagus from Navarra with creamy spring mushrooms'. Cafetetería Doña Blanca (from Hotel Blanca de Navarra). Pamplona.
- First award BRONZE: 'Texturas del Gaucho'. cafeteria Gaucho. Pamplona.

According to Dr. Cuervo, "it should be noted that these three dishes were among the five best rated to opt for the award for the healthiest pincho. In addition, the award for the best pairing with the wine framework Real was for the skewer "Glazed bacon with legume gel", of the cafeteria Siete del Siete, of the Hotel Palacio Guendulain".
