The results of the SUN (Seguimiento Universidad de Navarra) study, which provides scientific evidence in favor of the Mediterraneanper diem expenses , were presented at the Culinary Institute of America (New York) during the congress "Menus of change", held at partnership with the TH Chan School of Public Health at Harvard University.

International researchers, renowned U.S. chefs and a large representation of the industry highlighted the Mediterranean per diem expenses as the best model of healthy per diem expenses . Specifically, Walter Willett, from Harvard, the most cited researcher in nutrition, and Miguel A. Martínez-González, Full Professor of the School of Medicine of the University of Navarra and director of the group of the CIBER of Obesity and Nutrition of the high school of Health Carlos III, provided the scientific evidence in favor of this patron saint of per diem expenses.

The results of the SUN study, after studying more than 20,000 participants since 1999, show that a better monitoring of the Mediterranean per diem expenses significantly reduces premature mortality, while benefiting the sustainability of the planet: it is composed of foods that in their production generate less greenhouse effect and require less consumption of energy, arable land and water.

According to Martínez-González, "the Mediterranean per diem expenses followed in Crete in the 50s and 60s of the last century, with its characteristics of frugality, exclusive use of olive oil as culinary fat, with a preference for minimally processed vegetable products, instead of meat, full-fat dairy or ultra-processed products, represents the best option, according to scientific evidence available, to confront the unprecedented pandemic of obesity, which in the USA is leading to irretrievable public health setbacks and is also for the environmental sustainability of the planet".This is leading to irretrievable public health setbacks in the U.S. and is the core topic also for the environmental sustainability of the planet".

Spain as model of healthy living

In the same vein, the Spanish essay PREDIMEDthe largest nutrition study conducted in Europe, has repeatedly demonstrated a reduction of approximately 30% in cerebral or myocardial infarctions with the Mediterranean per diem expenses , and large reductions in the risk of developing diabetes, arrhythmias and breast cancer, especially when a high consumption of extra virgin olive oil is maintained.

For this reason, the experts gathered at the Culinary Institute of America have shown that in the U.S. Spain is increasingly regarded as model of healthy living. "Our country has been considered by the last report Bloomberg as the healthiest in the world. This report highlights the great programs of study on the Mediterranean per diem expenses initiated at the University of Navarra as a contributor to the good Spanish health indicators", assures Dr. Martínez-González. However, the expert points out that, paradoxically, the traditional Mediterranean per diem expenses is being lost in Spain, especially among the younger sectors.
