The Chair Tomás Pascual Sanz-University of Navarra awards two prizes to programs of study on antioxidants and nutrition to prevent childhood obesity.

The works of research have been elaborated by students of the European Master's Degree in Nutrition and Metabolism of the School of Pharmacy.

Anny Cristina Terán and María Candelaria Poyato, students of the European Master's Degree in Nutrition and Metabolism, have been awarded by the Chair Tomás Pascual Sanz-University of Navarra for their work on antioxidants in the preservation of meat products, and on nutritional intervention in children and adolescents to prevent overweight and obesity.

Both programs of study, made at the end of postgraduate program, have been recognized for their application internship, elaboration and exhibition. The awards ceremony submission coincided with the closing of the VI edition of the European Master's Degree in Nutrition and Metabolism, in which 17 students have participated, and the opening of the 2011-2012 edition, which will have 19 students enrolled, six of whom have obtained one of the Navarra Talento Internacional Scholarships.

Likewise, the Chair also awarded a award reduction of enrollment for the new course student Suyén Arriaza Lau, "for her academic and clinical performance during the licentiate degree as a dietitian-nutritionist, as well as her participation in hospital services", highlighted from the organization of the postgraduate program.

Two other students were awarded by group Santander with a 50% reduction in their tuition fees at Master's Degree. They are Isabel Juániz and Laura Pastor.

Of the 17 final projects Master's Degree, 12 were prepared and presented in English and two of them were carried out in foreign centers: at the University of Maastricht (The Netherlands) and at the University of Eastern Finland, in Finland, respectively.

Functional and natural foods

The first of the award-winning works, by Mª Candelaria Poyato, discovers that, depending on how natural antioxidants are added to meat products, these can be put on a par with synthetic ones and thus produce healthy and natural functional foods at the same time: "The goal is to obtain meat products with a lower content of saturated fats and a higher content of vegetable oils. Therefore, they are more heart-healthy and have a longer shelf life thanks to these natural antioxidants", concludes the graduate.

For her part, Anny Cristina Terán worked in the partnership that the University of Navarra and the Navarra Hospital Complex maintain to test the effect of a per diem expenses leave in calories, rich in antioxidants and proteins in 44 overweight and obese children and adolescents from Navarra. "According to the first results, the daily consumption of the children before the study was much higher than recommended, with an excessive intake of saturated fats. Likewise, we perceived alterations in some biochemical parameters related to several metabolic diseases", concludes the graduate of the European Master's Degree in Nutrition and Metabolism.
