The restaurateur from Guipuzcoa reviews at the University the work that he has been developing for more than thirty years in his restaurant.
The restaurateur Pedro Subijana offered a exhibition of his professional career to the students of the University of Navarra, and reviewed the beginnings and evolution of the Akelarre restaurant that he has been running in San Sebastian for 39 years.
The well-known chef revealed to the audience the secrets of some of his recipes and gave his opinion on the MasterChef program broadcast by TVE: "The idea is not bad, but there is always the doubt of whether the best person wins because circumstances, such as nerves or other incidents, leave very prepared people on the way". Likewise, he affirms that more than showing how they cook, "judgments and illusions" of the contestants are shown.
Subijana was invited to participate as part of the jury and declined for two main reasons: because he recognizes that he does not like to judge anyone and because he had to spend a lot of time away from his restaurant. On the other hand, last year he offered to share his knowledge with the aspirants to the program from the classroom of training of his restaurant.
Pedro Subijana has a long and renowned career in the field of gastronomicresearch , as well as being one of the driving forces behind the new Basque cuisine. He has taught courses in various American and European institutions.
His visit is part of the subject Culinary Technology shared by Degrees of Human Nutrition and Dietetics, and Pharmacy, of the University of Navarra.
