Dieticians-nutritionists choose the healthiest skewer

"Golosón, carajo!" combines vegetables and greens with high quality protein in a snack that was chosen among 24 semifinalists

The dietitians-nutritionists of the School of Pharmacy and Nutrition Iosune Zubieta and Elena Gascón have formed the team that has assessed the healthiest snack of the Week of the Pincho 2016, a competition that has been celebrated in Navarra for 18 years and that on this occasion has chosen as the healthiest pincho "Golosón, carajo!", from the Pamplona establishment El Goloso Barra Brava.

According to Iosune Zubieta, "this year the choice has been more complex if possible due to the greater participation of establishments and the fact that the finalist pinchos are of increasingly higher quality, both in terms of diet and nutrition".

In the case of the pincho awarded as the healthiest, the experts valued the predominance of vegetables,"which makes it a source of fiber, vitamins and minerals and gives it antioxidant properties. In addition, it contains high quality protein and a moderate fat content, both in quantity and quality, which has made it stand out from the rest and be worthy of the award", underlines Elena Gascón.

The choice of the winner is based on the Degree of suitability to the Healthy Pincho Index, developed by the University of Navarra. "Said index values the variety and proportion of main ingredients, their nutritional properties, adherence to the Mediterranean per diem expenses , the culinary technology applied and the organoleptic qualities of the candidate pinchos," explains Iosune Zubieta.

In total, 24 bites reached the semifinal of competition for the best pincho, among which was the winner of the healthiest bite, "which shows that gastronomic pleasure does not have to be at odds with health", concludes Elena Gascón.
