According to Isabel García-Jalón, an expert in food safety at the University of Navarra, "the epidemiological research being carried out to find the origin of the E. coli infection is particularly complicated due to the number of people affected, which already exceeds 2,700, and the fact that they are widely dispersed".

This was stated by the specialist on the occasion of the talk on food safety that she will give tomorrow, Friday 10, at the opening of a course on Applied Nutrition organized by the academic center.

For the professor of Microbiology and Food Hygiene, the alert for the food outbreak was justified by its extent and severity, "although it followed a track of origin that seems to be false and this was communicated in a hasty manner, with tremendous economic consequences. However, in the expert's opinion, the status "required the alert; another question is that it was not managed in the right way".

Regarding the most common causes of foodborne infections, Dr. García-Jalón states that the main trigger for outbreaks "is to be found in poor food handling, which can occur at any time or point in the food chain - primary production, processing, distribution, sale or consumption - and can be caused by different parameters, such as cleanliness, temperature alteration, etc.".

In this sense, the expert warns of common practices such as not washing the fruit if you are going to eat it with skin: "This internship is risky, since the fruit, or vegetables, may contain residues of pesticides, etc.". In spite of this, he reminds us that "fortunately, most of the microorganisms present are not pathogenic, or at least not in sufficient proportion to harm us".

The course that will be inaugurated tomorrow by Dr. Jalón will address other topics related to Nutrition, such as iron deficiency anemia, artificial nutrition, the determination of a person's energy expense , etc. More than 30 professionals in the field of nutrition and health will participate.
