The pincho "Salpicón de espárragos y perrochicos con vinagreta y mayonesa", presented by 'La cocina de Alex Múgica' in the Semana del Pincho de Navarra, has been awarded by the University of Navarra as the "healthiest", "for the variety of main ingredients, the adherence to the Mediterranean per diem expenses where the presence of vegetables from Navarra stands out and for its good nutritional profile , within its moderate energy value", according to Professor Marta Cuervo, dietician-nutritionist of the School of Pharmacy and member of the jury.

This award recognizes, among all the pinchos presented, the one that stands out the most, not only for its gastronomic value and originality, but also for its healthy properties.

As explained by the specialists in dietetics and nutrition, Iosune Zubieta and Marta Cuervo, the main aspects taken into account at the time of the choice have been the variety of ingredients, its adherence to the Mediterranean per diem expenses , highlighting the presence of vegetables and seafood, and its nutritional profile ."It is a skewer with moderate energy density and good nutritional balance in which an adequate fat profile stands out", they point out.

These experts have carried out a comprehensive examination of the 14 finalist pinchos, for which they have counted on the partnership of the chefs. Specifically, the culinary technology applied, the variety of main ingredients, the protein source and its adherence to the Mediterranean per diem expenses have been evaluated. The overall balance, antioxidant index and organoleptic qualities were also evaluated.

In the XIV Week of the Pincho have participated a total of 101 catering establishments. The organization has run to position of the association of Entrepreneurs of Hospitality of Navarre.
