Elsy de Santiago receives the award from congress Food Bioactives & Health

The doctoral student from department of Food Science and Physiology researches on a variety of cactus and the benefits of its consumption.

During the congress Food Bioactives & Health, recently held in Lisbon, Portugal, Elsy de Santiago, a PhD student from the School of Pharmacy and Nutrition of the University of Navarra, received the award for the best communication in her area of research.

A total of 80 presentations were given at meeting and more than 200 people attended. The main objective of purpose was to present the latest research on bioactive compounds in food and their effects on health. 

The future doctor of the School of Pharmacy and Nutrition is researching - under the direction of professors María Paz de Peña and Conchita Cid - on the nopal, a variety of cactus, which contains a large amount of bioactive compounds.

The goal of her work consists of evaluating the influence of different culinary treatments on these compounds. This was precisely the content of his discussion paper, where he addressed the procedure to evaluate the action of the intestinal microbiota on the polyphenolic compounds of nopal and their biological activity.
